“We weren’t quite sure what to expect, especially since there isn’t an updated menu available online—but that only made the experience more exciting. We were pleasantly surprised to discover Chef Mark Addison, just 25 years old and incredibly talented. We had the opportunity to sit at the chef’s table, where each dish was presented with thoughtful detail and genuine enthusiasm by Chef Mark. Drawing from his Italian and Irish heritage, he brings a unique perspective to his cooking. He even spent a month studying cuisine in northern Italy, where his grandmother is from—a connection that clearly influences his work. As for the food: the beet and goat cheese salad with kumquats was fresh and beautifully balanced. The prawns and mussels were an absolute 10. The trout was fantastic—perfectly cooked with a crisp skin and a delicious, well-executed sauce. The lamb chops were, without question, the best I’ve ever had—sourced from Colorado, incredibly tender, and paired with a standout mint-pomegranate sauce. It was also a pleasure to watch the young kitchen team in action. Their passion was evident—you could truly tell they love what they do. I won’t be surprised when, in a few years, I see Chef Mark in a major city and Michelin rated.”
“They say a picture is worth 1000 words – yet those (see photos) aren’t enough to describe the extraordinary experience we had this evening at the Chef‘s Table in Brock‘s Restaurant, Renaissance Ross Bridge Golf Resort. My wife and I truly enjoyed Chef Mark’s INCREDIBLE tasting menu which included seven courses. We cannot recommend it highly enough-unique ingredients, generous portions, exquisite presentation, and absolutely delicious! The fennel apple salad was artfully garnished with pom aril, watermelon radishes, pistachios, and a delicious citrus vinaigrette. The leek soup blended chive and crème fraîche. The buttered poached lobster tails were seasoned with tarragon, served with beurre blanc over fregola sarda. Incredible! Our intermezzo - shaved ice with infused champagne - was something chef Mark brought back from his travels in Italy. Our filet of beef course was among the very finest tasting steak we have experienced – a French style mustard sauce with oyster mushrooms and pine nuts. It melted in our mouths! Our wonderful meal was topped off with a delicious passion fruit tart, topped with a lavender meringue and drizzled white chocolate – to die for!!!! The best way I can describe our experience is to say that just when you thought it couldn’t get any better….. it did. Beyond the extraordinary culinary experience, we so enjoyed the wonderful interaction with the chef and his team throughout the evening. That’s what makes this experience so worthwhile. They take obvious pride in their service, teamwork, and the quality of excellence they achieve. We cannot recommend reserving a seat at the Chef‘s Table highly enough. “Unbelievable food. What a hidden gem! We had Iberico pork, oysters, and scallops. The charcuterie was amazing! The flavor profiles were totally on point. I wish there were more stars for this place! We also had breakfast here, and wow. Just all the good food in one place. We will be back!”
“I had dinner tonight at Brock’s and the atmosphere is amazing. It’s very modern with an open kitchen. I got to sit at the chef’s table and was greeted by amazing servers and chefs. The focaccia bread was amazing and so flavorful and served with the house butter. I enjoyed the flatbread with rotisserie chicken, goat cheese, and grapes. I would highly recommend the flatbread. It was delicious with fresh ingredients and made in front of you in the kitchen. This is a perfect spot for a great dinner and to get away and relax from the busy day.”
“Great breakfast buffet that was very expensive but convenient if you are staying in the hotel. Everything was fresh and they had someone at a station making omelets and would bring it to your table if you didn’t want to wait for them to prepare it. Overall the breakfast buffet was good. The staff was very friendly. We even came here at the end of our day for desert and enjoyed the restaurant that had a modern look and was quiet and relaxing.”
