While few spices call the Willamette Valley home, they have become an essential part of how we celebrate the ingredients that do.For the August installment of our Rooted in the Valley dinner series, we'll explore how thoughtfully chosen spices can transform and elevate the bounty of the Willamette Valley. Aromatic seeds, fragrant roots, dried flowers, bark, and herbs will be used not to overpower, but to highlight the remarkable produce, orchard fruit, meats, and vegetables harvested at the peak of summer.For one evening, our guest chef will present a multi-course menu that pairs the richness of local agriculture with the depth and complexity that spices have brought to kitchens around the world for centuries. Each course will showcase a different expression of spice, revealing how subtle layers of aroma and flavor can create an entirely new experience while allowing exceptional ingredients to remain at the center of the plate.Every course will be paired with RAW Cider Co. ciders, whose natural acidity, tannin, and orchard character provide a beautiful complement to the warmth, fragrance, and complexity of each dish.Rooted in the Valley is our celebration of place, season, and the people who make exceptional food possible.
