James Beard-awarded Maison Premiere is rooted in the traditions and ceremony of oyster bars and absinthe cafés, where at-hand service paired with frank advice about daily shellfish and quenching wines serve as well as the recipes from old bar manuals. We are inspired by the hotel lobbies and grand restaurants of New York, Paris, and New Orleans, replete with late-night diners brooding over bivalves and wading through glasses of pastis and absinthe. We offer our guests a list of over thirty oyster varieties, all sourced through direct, established relationships with the farmers. Our absinthe list features the largest selection in the United States and in homage to the ceremony and story of the infamous spirit, we offer perhaps the grandest version of traditional absinthe service. Showcased in the center of our bar is a meticulously fabricated replica of the absinthe fountain located in the famed Olde Absinthe House in New Orleans. Maison Premiere continues to nurture an intimate and welcoming gathering every night of the year, despite weather, holidays, or any other reason to stay at home. “The ultimate seafood tower! Had a lovely time here celebrating a birthday. They have fun cocktails, fresh seafood, and attentive staff. The atmosphere and aesthetic is cool, feels like you’re transported outside of Williamsburg and into vintage NOLA. All in all, would recommend and go again!”
“absolutely marvelous! stopped by on a brooklyn trip and so glad i did! we sat at the bar and noah was so knowledgeable and patient! he gave great recommendations and managed to answer all our questions, make great conversation, and get our drinks out lightning quick! the oysters were marvelous, the dirty rice too, but the scallops were just superb! great spot for date night; dim lighting, oval bar, and jazz! highly highly recommend”
“It’s top-notch for oysters. But we never expect the oysters from East Coast become our favourite! We were giving a try on the Thatch Island oysters, and we kind of having least expectations on them. Yet after the first bite, they were do fresh and balanced in the creaminess and crispness. The flavor cames earthly and mineral but also sweet! They are the no.1 of the day! We ordered the Dirty Rice and we thought it was just like a risotto. But it’s more than that! It’s rich in favour of Japanese Bonito and lobster, savoury and tasty! The Crab Toast was comparatively less among all. All dishes we paired with a glass of French Rose and the Forever IPA. This restaurant is now the top of my list in seafood bar of NYC!”
“I have travelled the world extensively over 40 years. I ate at all restaurants ranging from pop & mom’s to Michelin three stars. This is my honest review of the restaurant Maison Premiere in Williamsburg, NYC, USA. An outstanding seafood restaurant in the heart of Williamsburg — a true hidden gem! The entrance has a bit of a speakeasy vibe — there’s a small sign, but you need to look carefully to find it, and you enter through swinging saloon-style doors, which immediately set the mood. Inside, you’re transported to another decade: a beautiful oval bar, dim, jazzy lighting, and tables set close together, creating a lively and intimate atmosphere. Service was excellent — efficient and knowledgeable. We tried a selection of four different oysters, all fresh and unique, perfectly recommended by our waiter. The crab cake was outstanding — crispy on the outside, soft and flavorful inside, served with a great spicy sauce. We also had mussels and a salad, both well prepared, and ended with warm madeleines that were absolutely melt-in-your-mouth delicious. Overall, an exceptional dining experience — elegant yet unpretentious, full of character and flavor. Highly recommended if you’re looking for a memorable seafood dinner in Williamsburg!”
“For what this place costs, they should perhaps spend some time training their bartenders and service staff. 15 min to take a drink / water order, 25 minutes to receive that order. Everything slower after that. They had plenty of chance to upsell, as we wanted more drinks and oysters, but no one seemed to care. No picking up of plates or dropped food whatsoever. I was forced to eat my meal with a tiny oyster fork as I could not get anyone’s attention to bring a real one, and I was seated at the bar. What a fail of a restaurant. Terrible experience over all. Food was ok I guess. Will never return.”
