The term ‘vegan’ hardly does justice to the plant-based fine dining at humus x hortense. The botanical tasting menu changes according to the year’s 24 micros seasons, entirely depending on the harvest of the wild farm Le Monde des Mille Couleurs. The restaurant strives for the highest quality of ingredients and at the same time the lowest food waste thanks to ancient conservation techniques and zero-waste cocktails. Already in 2008, the visionary culinary couple, Nicolas Decloedt and Caroline Baerten, has coined the concept of ‘botanical gastronomy’. After all these years of pioneering, humus x hortense is awarded with a Michelin star in 2023 and a Michelin Green Star in 2021. We had a special tasting menu prepared by HxH and a Spanish restaurant. All courses were absolutely exquisite and original. The service was flawless, informative, attentive. The love and passion are present in every detail. The chefs are true artists. They play with colors, shapes, unique ingredients, and creativity to turn veggie dishes into real works of art. I was kinda sad to read some other reviews that didn’t recognize how much love, effort, and care go into the food here. You just can’t compare Humus x Hortense to an ordinary vegetarian place. “This is a great restaurant that I have visited about once a year for the last 6 years or so. The food is creative and always very good, but it should be noted that it is rather for those who look for freshness than intense taste experiences (i.e. spices). When I first visited the restaurants, I was extremely impressed by the home made non-alcoholic drinks; it has actually been a reason to revisit the restaurant. Since then, a lot has happened: it has become easy to find exquisite non-alcoholic drinks in most good restaurants, so I am not sure if the quality of the drinks has gone down in recent years or if there is just so many better drinks around nowadays, but the experience yesterday left me quite disappointed with the drinks. I mainly enjoyed the water to be honest.”
