The tasting room is intimate, thoughtfully designed, and artfully decorated, making it an inviting space to settle in and explore. The cocktail program stands out for its creativity and balance. These are not standard bar offerings—each drink showcased layered, complex flavor profiles that were thoughtfully constructed. The spirits themselves were equally impressive: rich, nuanced, and well-balanced whether enjoyed neat or in a cocktail. It’s clear there is real knowledge and passion behind the distillation and cocktail craft here. Highly recommended for anyone who enjoys thoughtfully made spirits, and we would absolutely return.”

“Wow wow wow wow wow! That’s 5 wows and it is intentional. Absolute gem of a discovery and I am a little embarrassed it took me so long to visit this incredible treasure of warmth, QUALITY, and elevated hospitality, within the real heart of Fort Collins. The fact that it’s a trot off the beaten path, near Link Lane and Rollerland, only adds to the charm and speakeasy vibe… I am so excited to bring more friends and colleagues over to NoCo Distillery for meetings, long overdue catch-ups and I’m super keen to see about organizing some workshops here, for clients!!! The interior is beautifully done and all the staff are so knowledgeable but also inviting of questions and learning ( shoutouts to Josh and Fatima for that!) This is a lot of accolade without touching on the liquid yet, but that’s because it is the ultimate sherry casked cherry on top… I really cannot get over how gorgeous and balanced the nose on every varietal and type of spirit was, no matter the proof. This is quite a feat and I know it can be attributed to the love, care and dedication which goes into their special distillation process. Well done NoCo Distillery… I will be thrilled to return soon. And the hot sauces are not to be forgotten!!”

“Noco Distillery delivers an absolute masterclass in craft spirits and genuine hospitality! From the moment we arrived, the host was just as amazing as the spirits, creating a genuinely warm and engaging experience that elevated the entire visit. We honestly loved everything we sampled, which speaks volumes about the consistent quality they produce. However, two particular spirits stood out and truly took it home for us: the powerful Cask Strength Rye and the incredibly complex Noco Whiskey. Beyond the spectacular spirits, Noco offers a surprising and truly fantastic extra selection: their house-made hot sauces. Do yourself a favor and try the Kimchi Hot Sauce and the Black Truffle Hot Sauce—they are absolutely unbelievable! If you're looking for fantastic craft whiskey served by fantastic people, plus some randomly amazing hot sauce, Noco Distillery is an absolute must-visit. Highly recommend!”

“Amazing selection and great cocktails- the tour is super fun! This place is a little hard to find - turn into the roller rink parking lot, stay to the right and go to the very back. Doesn’t look like much on the outside but the inside is a cool speak easy. Definitely check this out!”

“The best distillery in Northern Colorado, a hidden gem in Fort Collins distilling top notch liquor, liquors, bitters & hot sauce. Sebastian & Leif are the owners and such gifted guys in the business! They have a cool smaller speak easy bar set up by Rollerland area. You can enjoy a beautifully done cocktail or purchase liquor right there. They use the best ingredients, local ingredients & deliver the nicest smoothest tasty liquor.. You will be amazed at the many liquor they have. Go and give them a try and see for yourself. My go to to buy is their vanilla vodka, of course no sugar added, just yummy real vanilla beans. Others I suggest... Whiskey, Saffron gin, orange liquor, bitters, Tokila(tequila) & their delicious hot sauce! And they always have such kind customer service & wonderful cocktail specialist.”
