Paju is a Progressive Korean restaurant by Chef Bill Jeong, rooted in tradition and driven by evolution. Our dishes are thoughtfully composed using techniques from Asia, Europe, and Latin America, while highlighting the finest seasonal ingredients from the Pacific Northwest. Each plate reflects a balance of heritage, precision, and creativity, presenting Korean flavors through a refined and contemporary lens. Located at 513 Westlake Avenue N in Seattle’s vibrant South Lake Union neighborhood, Paju offers an à la carte menu that changes seasonally to reflect peak ingredients and creative inspiration. Due to our limited seating, reservations are allotted 90–120 minutes depending on party size. Dietary accommodations are very limited and subject to the chef’s discretion.
