“If there is a singular dining experience that defines the culinary evolution of the Dominican Republic, it is undoubtedly Casarre. My recent dinner there stands as the single best meal I have had so far this year. Led by the visionary Chef Olivier, Casarre does not simply serve food; it serves a narrative of the island. What stands out immediately is the marriage of impeccable technique with ingredients that are both startlingly simple and daringly unexpected. Chef Olivier possesses a rare talent for taking the familiar bounty of our land and elevating it through processes that challenge the palate while honoring the origin of the product. The intimacy of the space is a deliberate and brilliant choice. With its limited capacity, the restaurant transforms into an exclusive stage where every detail is meticulously curated. The service is not merely transactional; it is educational. The staff provides thoughtful, engaging explanations for every dish, turning the meal into a journey of discovery. Beyond the Plate: A Glimpse into the Future The highlight of the evening was undoubtedly the tour of Chef Olivier’s research lab. Witnessing the behind-the-scenes work—the experimentation and the bold plans for the future of the restaurant—was awe-inspiring. It is rare to see a chef so deeply committed to the scientific rigor of local gastronomy. For too long, the local fine-dining scene has relied on "A to Z" international menus. Casarre is a defiant and necessary pivot. By grounding their craft in local ingredients and local identity, Chef Olivier and his team are doing more than just cooking; they are building a legacy. This approach is exactly what the Dominican Republic needs to secure its rightful place on the global culinary map. It is this commitment to authenticity that will drive international recognition and draw food-focused travelers to our shores to experience the true soul of the island. Casarre is a triumph. It is a beacon of what is possible when passion, research, and respect for one's terroir collide. Congratulations to Chef Olivier and the entire team for your dedication to our culinary heritage—keep pushing the boundaries. You have set a new standard for excellence in Santo Domingo.”
“Dinner at Casarre Restaurant feels like a restaurant defining its own voice. The space is intimate and inviting, with a warmth that encourages conversation and curiosity. From the moment you arrive, the team’s genuine hospitality sets the tone — attentive, gracious, and proudly rooted in the Dominican Republic. What makes Casarre distinct is its wholehearted commitment to local ingredients and traditions, used in creative, thoughtful ways. The cuisine feels both familiar and fresh — grounded in heritage yet interpreted with a light, contemporary touch. Flavors are layered and purposeful, with careful balance between brightness and depth, richness and restraint. Textures are engaging, contrasts are considered, and every plate feels composed rather than excessive. There’s a steady sense of control throughout. Tropical influences are handled with restraint, and combinations that could easily overwhelm instead feel measured and harmonious. The pacing of the evening allows each moment to settle before the next arrives, giving the experience a calm, deliberate rhythm. The beverage pairings mirror this approach — enhancing the meal without competing with it. Most meaningful of all, the team helped us celebrate my wife’s 60th birthday in a way that felt personal and heartfelt. Presenting her with a handmade fan with local flowers was a simple but beautiful gesture — thoughtful, local, and deeply in keeping with the spirit of the restaurant. It made the evening feel intimate rather than staged. Casarre is charming and creative, intimate in scale but expansive in vision. It reflects a cuisine confidently exploring its own identity, rooted in place and moving forward with quiet assurance. It’s a restaurant worth returning to — and one worth watching closely.”
“A Culinary Experience That Tells a Story. Every single bite at Casarre was extraordinary. From the presentation to the storytelling behind each dish, you can feel the intention, history, and artistry woven into every course. It was not just a meal, it was a curated culinary journey. From the moment we walked in, the team made us feel completely at home. We were welcomed with a special mamajuana cocktail, a beautiful interpretation of the classic Dominican drink, elevated with glamour and creativity. That first sip set the tone for the entire evening. The intimacy of the space, the warmth of the staff, and the attention to detail created something truly special. Casarre is not just a restaurant. It is an experience for those who appreciate unique, thoughtful, world class moments. If you value dining that tells a story and touches the soul, this is a place you must visit.”
“I remember visiting the Dominican Republic years ago with my husband, who is a chef. At the time, he told me that despite the extraordinary quality of local products and culinary heritage, there was no true high-end Dominican gastronomy no technical refinement fully honoring what already existed. Back then, I couldn’t really argue with him. There were very few places where I could take him for elevated dining rooted in Dominican cuisine. Most fine-dining options leaned toward fusion: Italian, Mexican, Spanish, anything but a refined expression of Dominican food itself. Casarré feels like the beginning of a real culinary revolution. It represents an evolution of taste and a deep respect for Dominican gastronomic heritage, grounded in ancestral recipes, exceptional local products, and a clear technical vision that elevates and celebrates our heritage. Thank you for this experience. I truly hope this marks the opening of a new path one that inspires others to refine, honor, and elevate Dominican cuisine in the same way.”
“Unfortunately not worth the price. Came hungry, left hungry. Beautiful restaurant with an undeniably unique concept. You can truly tell that a great deal of thought, creativity, and effort goes into each dish, and we appreciated the focus on using local ingredients in inventive and unusual ways. That said, the experience ultimately didn’t justify the price. While I’m very open to experimental cuisine, we genuinely only enjoyed about half of the courses. Several dishes leaned heavily toward bitterness, and many of the ingredient combinations felt strange and, unfortunately, not very enjoyable to eat. The creativity was evident, but the execution didn’t translate into something satisfying for us. The most disappointing part was that after spending over $200 per person and committing to a 2.5-hour tasting menu, we left hungry. For me, the primary purpose of a restaurant is still to leave you feeling satiated, and sadly, that wasn’t the case. We actually had to go out and get food afterward. Neither of us have a particularly big appetite either so I can’t imagine how someone with a big appetite would feel after this. This was meant to be a special Christmas gift for my partner and myself, and I was truly looking forward to the chef’s table experience, which made the disappointment even more noticeable. The staff and atmosphere were wonderful, and the service itself was excellent, but overall it pains me to say that the experience simply wasn’t worth the cost.”
