Avid foodies Cynthia Orobio and Phillipe Sobon have translated their love for food, their native cultures, and one another into Polombia – an innovative fusion experience unlike any other. Both culturally rich countries, Sobon’s Poland and Orobio’s Colombia offer an array of traditional dishes that warm the heart. Polombia offers a modern take on classic dishes that incorporate ingredients from both countries, such as Emparogi, Kiełbasa Perro or Sal-CHI-papa.
“Polombia is such a creative and delicious spot! The Kiełbasa Perro was packed with flavor, the kolaczki were delicious, and the empierogi were absolutely amazing. Every dish had the perfect mix of Polish and Colombian flavors. Great food, friendly atmosphere, and definitely a place worth visiting again!”

The concept alone, Polish and Colombian flavors coming together, is brilliant, but the execution is even better. The emparogies are incredible: perfectly cooked pierogies with that rich, comforting Polish flavor wrapped in a crispy, empanada-style twist. The sal-CHI-papas are loaded, flavorful, and the perfect shareable snack. Crispy fries piled high with toppings that hit every savory note. The Kielbasa perro might be one of the most creative hot dogs I’ve ever had. The smoky kielbasa paired with Colombian street-style toppings creates a bold mix of flavors that just works. If you want the full experience, go for the Polombian platter. It’s generous, packed with variety, and gives you a great taste of how well these two cuisines blend together. Beyond the food, the vibe is welcoming and fun, and you can tell the menu is made with a lot of creativity and pride. It’s the kind of place that surprises you in the best way. If you’re looking for something different in Chicago that’s still comforting, flavorful, and memorable, Polombia absolutely delivers. I’ll definitely be back.”
“Such a cool and unique experience that you cannot get elsewhere. The menu is so creatively thought out and we were really impressed by the flavor of every single dish. Definitely coming back and the goal would be to try every single thing on the menu. The service was also top notch. We’ve visited a ton of Chicago restaurants and POLOMBIA definitely stands out!”

“After reading the creative menu I got excited an ordered 3 items from Doordash for $40. It's frustrating bc you cant leave order notes or choose chicken arepas or the flavor or soda or cookies you want. Even the 'dessert of the day' is a mystery! Emparogis were terrible and I expected shredded meat inside but it was savory mush and a hard (stale?) exterior. Luckily I chose the short rib on the side and will make 2 🥪 from it. I couldve sworn their website describes these differently than Doordash (see pics)! Salsipapa(?) Potatoes are decent but lacked bite--crunchier potatoes and salt plus strong sauce would make this amazing. The polish sausage was avg, also bc lack of taste in toppings. I ate half bc I was hungry. I got my hopes up BUT I'm willing to try the arepa, juices and cookies --in person, when I cab choose which--before making my mind up about this place. I really wanted to like it!”
