“Update (June 2026): Returned to Lilo for the summer menu, and it reminded me why this is one of my favorite tasting menu experiences. While I was happy to see the return of the N25 Kaluga Caviar paired with ice cream and celery salt and the A5 Miyazaki Wagyu, most of the menu was completely different, making the experience feel fresh rather than repetitive. The standout of the night was the Chawanmushi. The silky steamed egg custard, smoked abalone, porcini, and bone marrow glaze came together beautifully and ended up being my favorite course of the evening. This time I dined with a party of four, so I was seated at a table instead of the chef's counter. It made conversation much easier throughout the meal. The table is still just as close to the kitchen, and each course is brought over with the same thoughtful explanation from the staff. The only difference is that, depending on where you're seated, you may be facing away from the chefs and need to turn to watch the preparation. It didn't take away from the experience for me, but it's something to keep in mind if you're deciding between the counter and a table. I also added the truffle supplement again. Compared to my previous visit, the truffle flavor was much more subtle, and I personally didn't feel it added enough to justify the extra $35. I'd probably skip the supplement next time. It's rare to find a restaurant that makes repeat visits feel this exciting. I already can't wait to see what they create next season. Original Review (February 2026): Amazing experience at Lilo. The staff is among the best I have encountered, warm, attentive, and passionate. Meeting the chefs made the night feel personal and unique. A touching moment was watching the team kindly answer a young girl's questions and even let her help make a dish while dining with her father. It showed how much care they put into every guest's experience. Favorite dish was the wagyu, absolutely outstanding. The most unique was the caviar with ice cream and celery salt, unexpected and delicious. Unforgettable meal and I look forward to coming back.”

“Had an amazing birthday dinner at Lilo in Carlsbad. Honestly, the food was outstanding. I'd call it the best restaurant in San Diego right now. What sets Lilo apart is the fresh take on upscale dining paired with superior customer service. The beautiful courtyard where you start and end your evening is perfection. Our drink pairings were perfect and really elevated each course. The food was the star though. Every dish was a can't-miss. Zero misses across the board. The open kitchen setup was masterful to watch. My favorites were the uni amuse bouche, which was an incredible start, the perfectly executed abalone dish, and the melt-in-your-mouth wagyu beef. The scallop with just the right hint of fresh wasabi was excellent, and the little bread loaf served with the wagyu was a thoughtful touch. The ice cream with caviar was an unexpected and memorable finish. The playlist was a vibe, and service was attentive without being overbearing. If you're looking for a special occasion spot in San Diego’s North County, this is it. Can't wait to go back.”

“This is a Michelin star experience restaurant and comes with all the fancy foodie fine dining that honor gives. This is a chefs table experience. The food it's seasonal, complex, and luxurious. The non-alcohol drink pairing is really something special. The drinks are unique and multifaceted. And the interplay of each drink with its matching course really elevates each dish beyond high standards into delight. The artistry of presentation in each dish is gorgeous.”

“I dined here last Saturday and I have to say this was the most incredible dining experience I've ever had in my life! From the food to the service to the ambiance. What an incredible culinary adventure. Yes the experience is expensive, but honestly in my opinion it was worth every penny. I highly recommend that you pair your dinner with one of the drink pairings for the evening. Lilo has truly crafted an excellent variety of wines/sakes/cocktails that pairs perfectly with each dish. Note that the largest party that the restaurant can accommodate together is four, so if you have a party of six or more you will not be seated together. We had a party of six and while we were not seated together we were seated close enough to still enjoy the company. I cannot wait to come back and try a different seasonal menu. The attached photos only show a fraction of the various dishes that we were served that evening.”

“All of the pieces required to create a truly incredible "experience" converge in a beautiful symphony at Lilo. We have had the pleasure of experiencing two chefs tasting meals at Lilo, and both have been delightful. We have sat at the chef's table with a group of four and we really enjoy watching the process of the individual dishes being brought to life table side. Each dish is a feast for the eyes and palate. We enjoy the creativity and variety of the tasting experience with expert drink pairings. The staff is lovely... Attentive, knowledgeable, kind, and genuinely thoughtful. We look forward to each experience at Lilo.”
