“The mole is the dish most central to understanding what this kitchen is doing. Whether it shows up as a mole negro, a green pipian, or one of the regional preparations that rotates through the menu, each one is the result of days of preparation and reflects a depth of flavor that takes chile varieties, spices, chocolate, and time in proportions that a recipe can describe but only a practiced kitchen can truly execute. The wagyu beef preparations, often served as tacos with hand-pressed tortillas and a salsa that's made from a single specific chile from a specific region of Mexico, are the kind of dish where the sourcing and the restraint of the kitchen are both entirely visible. The sopa azteca, a dark, rich broth with dried chile and a gentle heat underneath crispy tortilla strips, is the quieter dish that tends to land as the one people remember longest. The desserts are elaborate and well-conceived, chocolate preparations in particular that draw from the Mexican cacao tradition in ways that most restaurants never think to attempt. The agave spirits pairing is the right accompaniment for those who want to understand what's happening in the glass as well as on the plate.”
“Phenomenal food and service! 10/10 across the board 👏 The warm soup with empanada was my personal favorite and it was simply the starter. The desserts were very unique and upscale yet tasted like something cozy a grandmother would make.”
“A very good tasting menu with a focus on a different regional cuisine from Mexico that changes every couple of months or so. The wine and tequila pairings with the courses were well thought out. The amount of food served is just right, not too much. The wagyu steak and hearts of palm dishes were my favorite. The small bites in the lounge before being seated were a great start to the experience. A little slow between courses would be my only comment.”
“tasteful. Knowing that this was Mexican, we were most looking forward to trying this tasting as we knew it would be flavorful and we were not disappointed. We also did the wine tasting with it which paired well. We originally were going to do the agave tasting but worried that it would have been too strong. Anyways everything was wonderful. They accommodated vegetarian and pescatarian diets well. Thank you for your service!”
“Absolutely fantastic experience at Topolobampo this past Friday night! From our warm greeting to prompt seating, we knew we were in for a good meal! Flavours of all the dishes were on point! Highlights definitely include the A5 wagyu (you can even make your own tacos with it for a luxurious bite) and the homey tortilla soup as the amuse. The chocolate cake was also to die for! Excellent wine pairing as well - respectable size pours and the flavors matched extremely nicely. Would not hesitate to return!”
