Located beside Selanne Steak Tavern in the historic Brayton Laguna Pottery Building, VIII by Selanne welcomes guests on Friday and Saturday evenings for an intimate, reservation-only tasting experience. VIII is structured as an VIII chapter arc — beginning with a Prelude, building through moments of warmth and crescendo, and concluding with a lingering Finale. Each chapter evolves with intention: light to warm, subtle to expressive, guiding guests through shifts in tone, texture, and emotion. Executive Chef Vincent Terusa and team craft each course within this narrative, while Sommelier Vito Pasquale curates pairings that echo the story’s rise and fall. With only 20 seats and one seating per evening, the experience is designed to be focused, unhurried, and fully immersive. Each evening at VIII unfolds in chapters. Each guest becomes part of its architecture.
