At Samurai Mama, our udon noodles are all made in-house, right in Brooklyn! Our udon soup is carefully prepared during a two-day process. The broth consists of an elaborate and balanced blend of konbu seaweed, shiitake mushrooms, flying fish, saba mackerel, katsuo bonito and maguro tuna, all of which are imported from Japan. In Japan, the preparation of udon varies from region to region, which results in distinct broth flavors and noodle textures, as well as the way the soup is put together and eaten. With this in mind, we are dedicated to creating udon that is unique and characteristic of where we are; to be enjoyed only here in Brooklyn. Since the texture of udon noodles is defined by the balance of protein and starch in the flour, we have thoughtfully sourced our original house blend from a mill in California. We use only freshly made and cut udon every day. We invite you to take a sip of the broth, taste the delicate flavors, and savor the aromas of the ocean.

The service was quick, attentive, and efficient, which made the dining experience even more enjoyable. The atmosphere was warm, cozy, and inviting. They offer comfortable seating for couples, booths for larger parties, and a large family-style table in the center for groups. The drink selection is also impressive, with a variety of wines, liquors, beers, and juices available. Overall, it was a very pleasant dining experience, and I would definitely return.”

“The sushi here is simply outstanding—beautifully presented, precise, and deeply satisfying. The ambiance is calm and refined, the service warm and attentive without being intrusive, exactly what you want from a Japanese sushi experience. The Nagatoro stood out in particular: rich, flavorful, and delicately plated. Thoughtful touches like offering both spicy soy and regular soy were appreciated. The miso soup was a clear, comforting broth, and the salad was crisp and fresh. Everything felt considered and well executed. Absolutely worth the trip from the Upper East Side, and very much a place I’ll return to.”
“I been here many times and never disappoints. The food is great and I always bring a friend over when they are craving for their first time udon, ramen or their creative ideas! Now my friend had his first proper udon experience and he really loved it! (He had pork curry udon) Highly recommend the taco sushi and the spicy washugyu bukkake ramen. Now if you love the soup itself more than the food then... this might not be for you as the soup is pour on top of the food but the base is much more concentrated as they mentioned. I have no problem with either and it's actually very tasty. So if you are adventurous and want to try something out of the ordinary this is recommended for you!”
