Opal's Oysters

“As a culinary arts teacher, I don’t play about food so when I say Opal’s Oysters delivered… they DELIVERED. We were in Waco for a competition and had to stop in because we love oysters. The East Coast oysters were cold, fresh, and everything you want them to be. And the champagne (our favorite) was exactly what we needed after a long day with students 10/10 pairing. Oscar took amazing care of us, and Sierra (the manager) was so warm and welcoming. She gave great recommendations and convinced us to come back for brunch with the kids and I’m so glad we did because brunch was even better. The kids stepped out of their comfort zones and ordered filet mignon, snapper, a crudo plate, seasonal fruit, and burrata. And let’s just say… A LOT of dessert. Every single thing was to die for. Watching them try new dishes and love it? Teacher win. Between the food, the atmosphere, and the service, Opal’s is absolutely worth the trip. I would 100% come back to Waco just for this spot. ⭐️⭐️⭐️⭐️⭐️ 10/10 recommend”

“We’ll definitely be back. We were celebrating a friend’s birthday, and from the moment we arrived, the atmosphere felt warm and welcoming. Soft lighting and light music set the tone perfectly. My favorite dishes were the Crudo and the Citrus Ceviche. The oyster platter with its sauces was absolutely delicious. We also shared the sea bass, garlic fries, clam linguini, and a 14-ounce NY strip steak. The food truly meets the standards of a refined palate—fresh, well-balanced, and full of exceptional flavors. The attentive service from our server, along with the cocktails and wine that accompanied the meal, made the evening even more enjoyable. And I can’t forget to mention the Basque cheesecake with guava sauce—outstanding.”

“This meal was a culinary delight! I’ve been to Opal’s twice now, and have been filled with joy at the artful care and fantastic flavors they offer. Both times I had the hotcakes with smoked trout roe, cultured butter, and honeycomb. I haven’t had many flavors that were this divine. Hats off to the Chef that came up with this idea. Wow! I was also thoroughly impressed with the mocktail menu. Tea No. 94 was fantastic. I’m a huge earl gray fan and this drink made me feel like I wasn’t missing out on anything because I couldn’t have a cocktail. We also really enjoyed the smoked oysters. Superb flavor! The Chilean sea bass has the perfect crispy outside and tender, flaky inside. My husband had the filet mignon which melted in your mouth. We even loved the greens that come with the meal. Very unique blend of tarragon, parsley and peppermint. The polenta was so creamy I had to say “wow!” after every bite. Last we had the strawberry bundt cake. It was warm! What a delightful and insightful surprise. So light and fluffy. Every part of our meal had high quality ingredients that were put together in a way to have flavor that was meant to be savored. “We visited Opal’s for a special occasion. The menu is unique and while we wanted to try various things, the prices are a bit high to do so. The oysters we got were tasty but the steak was a little overcooked. Still, everything was enjoyable. The atmosphere is lovely, and feels like you’re on the coast rather than in downtown Waco. Very well done! I would recommend it but we probably won’t return often.”

“This place was pretty amazing! We ordered the Sea Wall with oysters, shrimp, and crab claws. All of it was excellent—the shrimp was exceptionally juicy and delicious! However, the oysters had bits of shell, which is my biggest pet peeve. The Bloody Mary was good and tangy! The scallops on the half shell were cooked to perfection, but the truffle polenta was a bit too truffly (coming from someone who loves truffles). The lobster roll was tasty, but the overwhelming parsley and lemon juice flavor masked the lobster taste. The pancakes were fluffy and fantastic. The lobster Benedict was also great! I would suggest additional training for the wait staff—our waitress argued with us about what the dessert was, even though she never mentioned what it was. It's a baked Alaska. She also hardly checked in on us, and when we ordered shareable items, she only provided one plate for everyone to share. Staffing for brunch was also lacking, and having one or two more staff members would have helped because we waited a very long time for our main menu items”
