“Although I wasn’t entirely accustomed to the style of the molecular gastronomy, the wonderful atmosphere and excellent staff made it a great experience. I was so happy they helped me celebrate my birthday. The restaurant is located in a truly remarkable building, which made the occasion even more meaningful. I highly recommend visiting for special occasions.”
“Upon entering the building you are enveloped in this majestic scene luxury & beauty. The staff were kind & helpful. We were treated to our experience by pastry chef Antonio Bachour & so happy we had the opportunity. The starting wine was the best white wine we’ve ever had. Every course was mystical with every bite transporting you to beach in Spain. Needless to say food was great. The servers were very attentive- even changing napkins between courses with different temperatures. Very cool! Overall great experience & fortunate to have tried it”

“We were hoping for a full sensory circuit experience at Paco Roncero, but unfortunately, the evening fell a little short of expectations. The setting, while elegant in concept, felt overly bright — more like a chic asylum than an intimate, welcoming and personalized dining space. Small details that should have elevated the atmosphere instead distracted from it: two light bulbs were out among the few chandeliers in the room, the blue pillars showed visible chips, and our “ongoing G” plate arrived with finger stains. Even the printed cards accompanying each dish were misaligned and unevenly cut, resembling paper scraps rather than refined design pieces. Culinarily, there’s clear mastery in the seafood and fish courses — beautifully executed and expressive. However, the meat dishes felt overshadowed and less celebrated in comparison. For such a small room, a visit from Chef Roncero himself would have been a thoughtful gesture — a moment to connect with his guests and bridge the experience between the art on the plate and the story behind it. Overall, a memorable evening but one that could have been extraordinary with more attention to detail and warmth in the guest experience.”
“Paco reflects the highest highs and the lowest lows of the modern fine dining world. Some bites, like the toro roll, beef tartare, and calamari bocadillo, are divine. Others, like the pigeon cake and both shrimp dishes, are absolutely revolting in their execution. A difficult experience to reconcile. Firm 3 stars, but the nickel and diming of charging for a welcome drink loses another (with no suggestion of an extra fee, always implied and pushed as part of the wine pairing) is simply gross. There is no justification to screw out an additional 20 euro per person on top of a 420 euro bill per person. The wine pairing itself was excellent, the somm did a great job. Would not visit again.”
