“Prospect at Hotel Jerome has an upscale feel without being stuffy, and from the moment we walked in, Passion’s service made us feel welcome. I reserved the 3-course pre-theater menu for my wife’s birthday dinner, thinking we may order some additional small plates but we were pleasantly surprised. The portions were perfectly filling without leaving us overly full. We both started with the Green Goddess Little Gem salad, which was anything but little. It was a hearty salad with flavors and textures I haven’t experienced anywhere else. The sourdough crunch added something special and made every bite interesting. To help celebrate my wife’s birthday, the staff also brought us complimentary non-alcoholic champagne. It had the perfect balance of tart and sweet and was a thoughtful touch that made the evening feel even more special. For our entrees, we ordered the Pan-Seared Trout and the Paonia Chicken Breast. The trout was cooked perfectly—flaky, tender, and full of flavor. It was served with summer squash, quinoa, and a charred chimichurri that paired really well with the fish. The chicken was another standout. The breast was juicy with crispy skin that reminded me a little of Peking duck. It came with grilled asparagus, bell peppers, and crispy smashed baby potatoes that completed the dish nicely. Dessert was just as impressive. Because of our dietary restrictions, the chef prepared a special dessert for us. It included vegan chocolate chip cookies, sorbets, and seasonal fruit. It was thoughtful, delicious, and the perfect way to end the meal. The service throughout the evening was excellent. Our server, Antonio, was attentive, friendly, and genuinely passionate about hospitality. He made us feel right at home. Whether you’re celebrating a special occasion or simply looking for a great meal in Aspen, Prospect delivers. Between the food, service, and atmosphere, it was a memorable experience and one I’d gladly recommend to anyone visiting the area.”

“Everything about this breakfast was next level. The service was impeccable. The food was superb. The mood, decor, lighting, and ambiance are rustic modern at its finest. Prospect's huckleberry skillet cake may be the best pancake I've ever tasted. Sprinkling pine nuts within the syrup reminded me of nature from the safe enclave of a delicious comfort dish while acting as a damn fine flavor pairing with locally sourced berries. Their chicken fried steak was cooked perfectly, and so were the potatoes. My wife really enjoyed their fritatta. The service is where this place really shines, though. We felt cared for, and the positivity and concern of Prospect's staff set an incredibly congenial tone.”
“The food at Prospect was genuinely wonderful, and the hotel itself has an incredible atmosphere. Unfortunately, the restaurant’s service was nowhere near the standard you’d expect from a place of this caliber. Our servers were disorganized, dismissive, and surprisingly rude. Entrées were served before the soup, and when I asked about the mix-up, they acted like I didn’t understand basic dining order and doubled down instead of fixing it. By the time the soup finally arrived, we were already full. The entire table was shocked by how the staff responded. Misha, our main server, disappeared after the mistake, and another staff member—hostess or manager, not sure since she never introduced herself—set plates down with an attitude that felt almost confrontational. It was surreal to experience such poor, chaotic service in a restaurant with such great food. Amazing flavors, completely overshadowed by some of the worst service I’ve had in Aspen.”
