Corima is a Progressive Mexican restaurant that combines flavors from Chef Fidel Caballero’s upbringing in the north of Mexico, global influence from his travels, and a strong focus on local and seasonal cooking. Corima — which translates to “circle of sharing” — highlights ingredients and techniques from the northern states of Mexico alongside Japanese, Chinese, and Spanish flavors to bring a unique, Progressive Mexican cuisine to New York City. Chef Caballero hails from the border towns of Ciudad Juárez, MX and El Paso, TX. He has spent the last fifteen years cooking around the world from spending time in Basque Country with the great Martin Berasategui*** to sous chef at Contra* in New York, as well as Shanghai, to name a few. The beverage menu at Corima pays homage to the Northern region’s rich heritage, focusing on Mexican spirits such as Sotol, as an ode to the Chihuahuan Desert, along with natural wines from the Guadalupe Valley.

“We did the tasting menu and it rocked our world. Every bite was better than the last. The service was incredible, the food was jam packed with flavor, the vegetables were so fresh, and the cocktails were unique and flavorful. The spirits pairing was informative and delicious. The off menu guava y queso dessert was even better than the menu desserts. Absolutely floored by this place. Chef Caballero’s talent and vision are clear from the very first bite. Corima’s team is a well-oiled machine, and it was such a pleasure to watch them work together like a team. If you have the chance to do the tasting menu, I couldn’t recommend it more.”

“Loved the menu and food at Corima. We made reservations 2 days before so coukd not get the tasting menu, but tried few things from their regular menu. Lobster was one of the best I have ever had and the tortilla with butter was very addictive. Will be back again!”
