Promoting a non-interventionist approach to winemaking, we are a crew of quirky individuals making and selling very serious wild yeast fermented, neutral oak aged, dry farmed wine exclusively from the west side of Paso Robles. Though our winery is tiny by every standard, our wines express cosmic attitude, a fine degree of hubris & exuberant dimension. Our grapes are all from gnarly limestone vineyards in the hills west of Paso Robles. Vine yields are unreasonably low, & of consequence the resultant wines reflect the essence of individuality & intense character that only comes from grapes which grow up rough & live hard. There is firm empirical evidence to the effect that yeast and other varied wine pathogens die of boredom unless given an interesting environment within which to practice their art. Thus, at Le Cuvier, we have firmly dedicated ourselves to making life as interesting as possible, while leaving the entire process of winemaking in the hands (so to speak) of the wild beasties. Indeed all human efforts in the effervescent process are evanescent. Simply put, wine is best when left to its own devices. Interference in the natural fermentation process is tolerated only wherein it extends the life of the creation. The deep-hued, opaque & intense character one experiences from Le Cuvier wines is borne from this hands-off approach, married with these three philosophies: 1. Wild yeast fermentation is practiced exclusively. 2. Dry-farmed fruit is chosen wherever possible. 3. Each wine spends a minimum of 33 months in neutral oak, reaching uncommon maturity. Our resulting wines not only develop a complex array of flavors and aromas, but are also incredibly age-worthy. Please note, our experiences are currently offered to guests 21 years of age or older. We welcome well behaved pets on a leash.

The building and view is beautiful too. The wines were great and the food served with each complemented them and tasted exquisite. Xavier explained everything in such detail and passionate enthusiasm that I couldn’t help but become more and more excited with each sip. If I lived here I would visit Le Cuvier as often as I could. If there’s one winery to put on your bucket list, it’s this one!”

The wine selection is so broad in flavors and you can tell they put a lot of love and thought into the process.
