Ltd Edition Sushi offers one omakase menu and limit our orders to 30 a day to ensure the freshest, highest grade sushi possible. We source seasonal fish locally and from Toyosu Fish Market in Tokyo. With 8 person sushi bar + 6 person table two passionate Japanese chef Keiji and Jun have created an intimate experience similar to what you would find all over Japan. We open for Dinner Monday - Friday. Occasionally on Saturday. **Due to Japanese traditional cuisine requiring use of soy sauce and miso, we are unable to accommodate Gluten Free requests. If any kind of shellfish is an issue, it might be difficult to accommodate such requests. “Fantastic experience! Excellent price-to-fish ratio. The nigiri stole the show, with generous “split” cuts of fish from sushi chef Keiji to maximize the fish portions. Chef Keiji told great stories about the fish selected for this season (late Spring). Warm, communal vibe with other like-minded sushi lovers - I had a lovely chat with the solo diner next to me. A top quality meal to remember.”
“4 of us went and had an exceptional dinner. 3 had sake pairings which were sublime, nuanced and delicious. We started with the 4 appetizer dishes, then glowed to 2 nigiri courses and a hand roll of monkfish liver! (Yummy) Since this is a unique experience, you had to block out the visuals, you’re used to and concentrate on the taste. When you’re eating baby eel and squid, you can’t look. I lived the squid - the baby eel was ok, the ‘soup’ it was served in was amazing. We had 2 hand rolls made at the table. Tamago to finish with another sublime broth. Service was measured and leisurely… you can’t be in a rush - server was expert and pleasant ! Kia was awesome”
“I made a reservation for two at a table to celebrate my son’s birthday, and it was our first visit. Although it’s a small restaurant, it has a very private and cozy atmosphere. The server’s explanations were thorough and easy to understand, and every dish was absolutely delicious—some were so impressive that I couldn’t believe we could enjoy them here in Seattle. As someone from Japan, I was both truly surprised and delighted to be able to enjoy sushi and cuisine of this quality in Seattle. We heard that the menu changes with the seasons, so we would love to come back and try different dishes throughout the year. It was a wonderful experience for both my son and me. We will definitely be returning. Highly recommended.”
“LTD is easily one of the most memorable omakase experiences in Seattle—intimate, seasonal, and thoughtfully curated from start to finish. We visited right at the debut of their spring menu, and it felt like stepping into a celebration of the season. Chef Keiji brings each course to life, sharing the stories and traditions behind ingredients like baby conger eel, baby squid, and sea conch, which made the experience feel both personal and immersive. The opening courses were beautifully composed, with delicate preparations and sauces that were subtle yet perfectly balanced. Then came the sushi course, which absolutely delivered. Standouts included melt-in-your-mouth fatty tuna, creamy uni, sweet Dungeness crab, rich monkfish liver, a perfectly constructed hand roll, and a lightly sweet tamago to round it all out. If you can, go for the sake pairing. It’s a fun way to explore a range of flavors that complement the meal. Prefer something stronger? Their Japanese whisky selection is equally impressive. The vibe here is not stuffy making it a fun night out. With just two seatings a night and a limited number of seats, reservations are highly sought after and released monthly. “Wonderful omakase experience! We decided to try something other than Kashiba in Seattle, and it was a hit. Our server, Kia, was attentive, knowledgeable, and friendly. She took time to explain each course, and the origin of Ltd. The food was excellent, the to was the best quality, uni was from Hokkaido and extremely fresh and sweet. We had high expectations, and Ltd did not disappoint. We'll come back to this place again”
