Featuring Chef Nobu Matsuhisa’s signature new-style Japanese cuisine, Matsuhisa Vail is located in the Solaris Plaza in the heart of Vail Village. Our dining room is open from 5pm nightly. Takeout available nightly from 5-9 pm. Chef Nobu Matsuhisa’s fusion cuisine draws influence from his classical training in Tokyo and his life abroad in Peru, Argentina, and around the world, showcasing signature dishes such as Yellowtail Sashimi with Jalapeño, Black Cod Miso and White fish Tiradito.

“I lived in Japan for many years, so I’m quite picky with Japanese food. The rolls were very good, with balanced flavors and good quality fish. The udon portion is large, but it was so tasty and comforting that I would easily eat it on my own. The uni was very fresh and had a clean, rich flavor. The crispy rice was not my favorite. The restaurant is quite big, but the service was still attentive and efficient.”
“This is our first night in Vail and decided to have dinner at Matsuhisa, a few friends recommended it so we had high expectations for our meal and they did not disappoint! We ordered a warm Dai-Ginjo sake that was excellent and although it seamed like a small jar, it actually lasted through our entire dinner. For food, we started with the Yellow Tail Tataki, it was delicious, and then continued with black cod lettuce cup and miso eggplant (my favorite- anything miso is always a good way to go), also de spicy tuna with sticky rice (it was not as tasteful, I would not order again), and the combination sushi which was also great (perhaps a little less wasabi on the rice base would have been better for my taste). The overall dinner experience was enjoyable and tasteful, I would definitely come back :)”
“Easily our favorite restaurant in the valley. The staff especially shines in the care and service. If you are new to Nobu or Matsuhisa, simply tell your server what things you like or dislike, and trust completely that they will provide a great experience.”
“Was in town for go pro games.Did the omakase and added a sea bass with truffles. Great server who guided us through the meal. Sat at the bar. The head chef kept showing off some truffles he had. Way better than expected for sushi in the middle of the rockies.”
