Merchant Roots is a boutique fine-dining restaurant. Our menus are heavily theme-driven and immersive. At any given point, our guests could be whisked to the Swiss Alps to scoop up sprinkles of blooms off a green hillside while enjoying a menu of edible flowers, or invited to a Mad Tea Party where they encounter an Apple-of-your-Eye cake featuring a photo of themselves gazing up from the past. Led by Chef Ryan Shelton, we have an intimate team of 5 who all work passionately to design recipes, make plates out of various materials, and fastidiously choose wine pairings. Every three months we change our service format, plateware, menus, and decor dramatically to match our theme.
Merchant Roots currently operates Tuesday - Saturday, with seatings at 5:30 and 8:00PM. We look forward to your visit!
Your ticket price includes a $6 donation to Merchant Roots Community, a fund that enables our employees to donate to charities of their choice. For more information, visit the Extracurriculars section of our website.
We have allocated several evenings to gluten-free or vegetarian guests.
Please note the following:
- Any and all protein-based restrictions should plan to dine at Merchant Roots on one of our vegetarian evenings.
- On these dedicated nights, all guests will enjoy a gluten-free or vegetarian menu respectively.
- All other times, we politely decline all dietary restrictions.

“Big fan of their concept. I’ve been twice by now, and became a big fan. You’re getting more than just a meal, you’ll move around between different areas of the restaurant, you’ll interact with your food in new and unusual ways, everything is very creative. The food itself is delicious and very worth the investment. You can clearly tell everyone there deeply cares about what they do.
Between Color Theory and Feast of the Moss Woods, I’d say I enjoyed the former a bit better, but both were excellent”

“This place is run by chefs only, and unfortunately, I have to say it shows... We booked one of the last meals from their mushrooms centric menu that had been running for several months. Somehow, despite that longer run time, it seemed like they were still unsure of what the dishes were or how to describe them to diners. The meal itself started off intriguing with the delicious mushroom tea, and overall it was interesting, but to me it felt that more often than not, the flavors were unbalanced or failed to highlight the mushrooms that should have been the center of the meal. The choices on some dishes felt childish at times, prioritizing form over flavors (like the gnome that tasted like nothing but peppers). Perhaps my expectations were too high, but this felt like an amateur chef's meal that while aiming high, doesn't hit the mark and certainly doesn't justify the price point.”

“Disappointed. Beautiful setup, great service, but the food... Meh... It started with the mushroom tea and a biscuit. Delicious, full of flavor, well seasoned. And then it went all downhill from there. The next six dishes that were waiting for us at the table, were a huge disappointment. Bland. I was tempted to ask from some salt, pepper and tabasco sauce to fix it. Then there was a mistery box dish that we had to find with the compass. Cute, ok. But it was sitting in that box unrefrigerated for more than an hour. Is that fine dining? Trout dish and sausage were ok, and I just wanted to like them compared to other dishes. Desert was also ok. Again, everything was beautifully presented. However, to me it's useless if the food is bad. I'd rather get good food that looks ugly.
The alcoholic pairing was also hit or miss. The non-alcoholic pairing was mostly miss with the lowest point was the cucumber water.”
