Muku (“無垢”), meaning “purity” or “innocence,” is a Japanese restaurant in New York City led by award-winning Chef Manabu Asanuma, whose experience spans acclaimed kitchens in New York, Japan, and Taiwan. Rooted in seasonality, simplicity, and intention, Muku draws inspiration from kaiseki while celebrating "goho" - the five classical techniques of Japanese cooking: raw, grilled, simmered, steamed, and fried. Each dish is crafted with restraint, using only what enhances the true character of the ingredients, resulting in a focused, expressive cuisine that honors tradition while offering a refined, modern Japanese dining experience. Guests are welcome to bring bottles not featured on our beverage list to enjoy with our menu. Corkage is $175 per 720ml sake bottle or 750ml wine bottle, with a limit of two bottle per reservation. “I had an amazing date night at Muku, which had been highly recommended by a friend. We arrived early and were seated promptly by the warm and welcoming staff. The ambiance was intimate and thoughtfully curated. The space featured a beautiful antique Japanese wall panel, an L-shaped hinoki counter, and handcrafted ceramic pieces displayed throughout, creating an atmosphere that felt both refined and deeply personal. One of the highlights of the evening was watching the chefs compose each dish. Their meticulous attention to detail transformed the meal into a form of performance art, making the experience as visually captivating as it was delicious. Every course in the kaiseki menu showcased exceptional technique, seasonality, and balance. My personal favorites were the Sakizuke (abalone with soft-shell turtle jelly, tiger prawn, and shinjo), the Oshinogi (karasumi risotto with kumquat and fava beans), the Yakimono (charcoal-grilled unagi served with jellyfish and cucumber salad) and the house-made soba crafted from buckwheat grown by the chef’s family in his hometown in Japan. This was a truly memorable dining experience, and we look forward to returning to explore future seasonal menus. I’ve already been recommending it to friends and will continue to do so.”
“Great kaiseki experience. I loved watching the chef cook many of the dishes in front of us. The aromas of the ships and grilled meats added to the experience (and thankfully they kept the smellier fried cooking in another kitchen). The service is impeccable, though a little uptight for my personal taste. The decoration is minimalist, well thought and very cozy.”
“Came here to celebrate my birthday and had Chef Manabu’s food before when he was at Ichimura. Now that he has his own place, we had to try. The menu is more modern and slightly fusion compared to traditional kaiseki, but still keeps the elegance and balance. Everything was thoughtful and beautifully presented. Loved it.😍”

“It was a very delicious kaiseki meal at Muku. It’s a bit more understated than the other Kaiseki places of a similar price point in terms of presentation and pulling out all the stops. It doesn’t look very fancy but it’s still super delicious. Muku has a more like it was made at home taste but still elevated. Service was good. What stood out to me was the white miso soup, wagyu, crab rice and the orange soda/sake ice cream dessert. But they could’ve served another mini dessert course and given diners a little treats bag to go that all the other restaurants are doing.”
