Every single ingredient on that plate enhanced the dish to the point where it felt like we were eating a symphony. Each bite was better than the last and these dishes were pure art and poetry. The service was top-tier. It was like something I would find in New York City at a very fine restaurant. This is truly a credit to the Denver area.”

Our server was fantastic (I wish I could remember her name!), the atmosphere was lovely, and the food...🤌🏻...delicious! It was an experience from the beginning to the end. There were 2 of us and we selected 1 item from each section of the menu to share--Earth, Grain, Sea, Pasture. These items are definitely meant to be shared! It was just enough food for the 2 of us. And the dessert was divine! I would highly recommend this restaurant and would love to go back if I'm ever in Denver again.”

The menu is on the smaller side, but every dish feels dialed-in and seasonal - true “quality over quantity.” The standout was the Sakura Pork Chop: perfectly cooked, deeply flavorful, and paired with thoughtful sides. Do not skip the warm bread service with cultured butter, it’s the kind of simple luxury that sets the tone for the meal. What really made the evening, though, was the team. Everyone we met was warm, knowledgeable, and genuinely fun to chat with. You can tell this is a chef-driven restaurant that cares about its ingredients and its guests. A bit of background: Mercantile lives inside the beautifully restored Union Station and blends a restaurant with a European-style market - a nod to its roots in celebrating Colorado producers and seasonal cooking. Whether you’re planning a cozy date night or grabbing a quick, high quality meal downtown, Mercantile delivers. Bonus: being in Union Station means plenty to explore before or after dinner. Highly recommend. What we loved: Sakura Pork Chop, bread service + cultured butter, attentive staff, Union Station vibe Tip: Make a reservation if you’re timing it around trains/events; ask the staff for pairing suggestions…they’re spot on.”
“We were here for the happy hour while in Denver one afternoon. It’s located inside Union station. We sat at the bar and got the Mercantile High-five, a couple non alcoholic beet mocktails along with the peach and arugula salad. Everything was delicious! Our server was wonderful. Their menu options for food is quite good. Will definitely stop by when in the vicinity the next time around.”
