In JAN, a contemporary cuisine is served that combines traditional techniques with pioneering creativity in an equal measure. Jan Hartwig's wish is to create memorable dishes that linger in the memory and provide his guests with an unforgettable experience. He loves to play with acidity and different textures. He is known for interpreting the DNA of German cuisine and translating it into new flavor worlds.
“The food here is French technique, a dash of Japanese influence but still inherently German. Some connections to old world fine dining as well. The atmosphere is playful, somewhat more relaxed but welcoming. My favorite courses were the potato soup, fish roll and pike dumpling. Chef Jan was present and just the nicest. Grateful for the whole team for easily the best tasting in the country. Special thanks to Rheza, Florian, Hanna, Paulina, and Marcus for serving me.”
“Restaurant JAN exceeded all expectations and delivered a truly exceptional dining experience. Jan Hartwig masterfully combines innovation and creativity with a deep respect for his German roots, resulting in dishes that are both memorable and beautifully executed. The venison course was a particular highlight of the evening. Paired with attentive, knowledgeable, and genuinely warm service, the meal ranks among the finest dining experiences I have ever had.”
“12/2025 JAN in Munich offers a calm, minimalist setting that gently draws your attention to the plate, with the semi‑open kitchen and the motto “labor der liebe” underscoring how much care goes into each dish. The meal opens with the restaurant’s signature Pike Dumpling, where caviar, lobster, brown butter, poached marrow and vin jaune sauces come together in a rich, complex composition that still feels harmonious rather than heavy. Another highlight is the scallop course, served with two distinct sauces that each integrates seamlessly with the shellfish, adding layers of flavour and giving the diner two equally compelling interpretations of the same ingredient. The menu closes on a refined take of German comfort food: meatloaf, this time made with real rabbit rather than “fake rabbit”, carrying a pleasantly gamey character that pairs beautifully with a local Philipp Kuhn Kirschgarten GG Spätburgunder, whose mushroom‑and‑earth notes echo the dish’s rustic depth. Overall, the experience clearly meets the three‑star “worth a detour” benchmark in terms of concept and execution. However, finding a fish bone in the salmon belly amuse‑bouche is a serious lapse for a restaurant at this level, and it inevitably costs a point when assessing food quality.”
“My visit goes back to mid-January and I still find myself thinking about the level of service and quality at JAN - which says a lot. This was an exceptional experience from start to finish. The service was polished, warm and precise in a way that very few restaurants manage. The dishes were outstanding across the board but “Seeigel Louise” stayed with me in particular - it was so good I could easily have eaten it three times in a row that evening. The rabbit royal was also fantastic, unique, and executed at an extremely high level. A special mention also goes to the alcohol-free pairing, which was exceptional and added real depth to the experience rather than just accompanying it. For me, the chef is without question among the seven best chefs I have experienced worldwide. That is not something I say lightly. If you come to Munich and care about truly great gastronomy, JAN is an absolute must. I am already happy to be back again soon!”
“I’ve had JAN on my list for a long time, and I was honestly very happy to finally visit. The dinner was exceptional. The food was truly incredible, precise, balanced, and full of flavor. From start to finish, it was faultless. Really, really, really good. If you’re in Munich, this is absolutely a must. Really glad I finally went.”
