La Borie is the name of our farm in Haute-Loire. With this Parisian restaurant, our aim is to offer you an authentic experience, rooted in the seasons and infused with the very essence of our countryside farm. We believe in a holistic approach to cooking, where every dish is the result of a carefully thought-out process, from seed to table. We lovingly grow our own produce, from fresh vegetables and aromatic herbs to poultry, sheep, snails, and even bees.
