Sushi Bar Shu was incepted by Chef Hyunki Shin with the customers’ satisfaction as the main focal point. Through 20years in his culinary journey he has trained under several notable names locally, as well as in Japan. His menu derives of dishes created through research and knowledge of pairing ingredients to enhance their natural flavors. Chef Shin’s obsession with the “why’s” of seasonality allows him to create simplistic yet elegant dishes.
