With each passing year, Chef Hiro expanded his repertoire, acquiring skills that allowed him to transform humble ingredients into exquisite culinary masterpieces. His dedication to perfecting his technique and deepening his understanding of traditional sushi-making led him to open Sushi-dokoro Miyama, a testament to his lifelong commitment and a pinnacle of his career. Sushi-dokoro, meaning "Sushi Place," embodies a return to roots, offering an authentic sushi experience without pretense—just pure tradition. Here, you can taste sushi reminiscent of the classic days, every bite a reflection of Chef Hiro's mastery and passion. The course features about 20 dishes, each one a showcase of Chef Hiro's skill in preparing nigiri with the freshest fish, meticulously selected from Japanese fishing ports and markets. Every small portion tapa is designed to be perfectly paired with a variety of specially selected Japanese sake, enhancing the dining experience and celebrating the flavors of Japan. Chef Hiro’s journey is a testament to the incredible skills he has developed and the passion that propels him forward in sharing the art of sushi with the world.

“First of all, I'm very sorry that I was late this time. I have something very urgent, so I called many times to explain and ask for more time. It was said online that the reservation would be cancelled in half an hour. I was two minutes extra and was fined 400 dollars and didn't have the meal. I understand that rules are rules, but aren't they a little too harsh? No omakase I've eaten at has ever had such a situation.
